These fun strawberry & chocolate cupcakes were a daycare success! the kids and I had so much fun making these for my son’s daycare.
I have to be transparent, this was not what I plan to make for my son’s daycare for easter. Plan A was to make these chocolate covered strawberry kabobs with other fresh fruit for a more healthier choice. After carefully thinking about it and also needed to consider his daycare providers who would have to hand those treats out.
Plan B was these delicious dirt carrot cupcakes.
My kids helped with these and we had so much fun in the process. This was pretty straightforward dessert and it was our first time making chocolate covered strawberries.

Making The Chocolate Cupcakes For This Fun Strawberry & Chocolate Cupcakes For Daycare Success
First we made the box of chocolate fudge cake mix and followed the instructions on the back of the box. They love using the KITCHEN AID MIXER and of course standing right behind them.
Then, lined the muffin tin with cupcake liners and poured cake batter 3/4 full and baked it at 350F for 16 minutes. Let them full cool before handling the cupcakes.
The best part of baking is liking the batter from the egg beater of course.Look at that face……PRICELESS!!!!!
When the cupcakes are fully cooled off, take a spoon to make a hole to sit the chocolate covered strawberry in. Depending on the size of the strawberries is how big the hole will be.
Save all the middles you cut out in a bowl as you will need it to put crumble over the icing afterwards.
Take a small icing spatula and some chocolate frosting and carefully spread it all over the edge of the cupcake.
Wash the fresh strawberries really well and set to dry on paper towel till completely dry. Do not cut them and keep the steams on, as you need them as the stem for top of carrot look.
MAKING THE CHOCOLATE COVERED STRAWBERRIES FOR THESE FUN STRAWBERRY AND CHOCOLATE CUPCAKES FOR DAYCARE SUCCESS:
Got these orange chocolate melts are delicious and I must say pretty simple to melt. Follow directions on the back of bag, as every product are different. We use the microwave on low heat in 30 second intervals.
Don’t fill bowl to the top with chocolate, melt as needed. Take a skewer to dip into the strawberry into the melted chocolate one at a time.Then place on a lined baking sheet. Typically, I line with parchment paper but I didn’t have any on hand. So I used tin foil and it work just fine.
Place in fridge for 30 minute to harden the chocolate or until you are ready to put in hole of cupcake. Take the berry and place in centre of cupcake. We added some easter sprinkles to make them look more festive.
That’s it! Simple treat and half healthy (HAHAHA) with the strawberry and the kids are so proud of themselves. Definitely make these again and they were a huge success at daycare. My son had only one request, he needed to pack up a few chocolate covered strawberries without the cupcake for his favourite daycare teacher as he said she doesn’t eat cupcakes! Oh my goodness, he is hilarious.
